John Almansa works organically with biodynamic principles in the Languedoc. He farms sheep, keeps bees and makes olive oil, honey and wine. All harvesting is done by hand, and once complete, the sheep are free to roam the vines. He creates atypically fresh wines from his Mediterranean vines, that still bristle with those garrigue herbs.
