Domaine Les Fouques
Yves, his daughter Christelle and her husband Jacques work biodynamically, hidden in a valley. The vines are on wild-boar infested forests and share farms with pens of biodynamic ducks, geese and guinea hens. The ancient terroir is built up of clay and schiste and provides complex minerality to the wines. They use organic compost that they make and ferment at the estate. The wines, like the estate are beautifully reflective.
